Cake, Please! in Greater Austin, Texas supports Candlelight Ranch/ Tribeza Fashion Show Charity Event

September is going to be a busy month for Cake, Please! a specialty cake service in the Greater Austin, Texas Area. On top of the normal flow of cake orders fielded by the business, Cake, Please! will also donate a cake to the Candlelight Ranch/Tribeza Fashion Show charity event. The event will be held on September 12th at the Austin Music Hall. Candlelight Ranch is a non-profit organization that provides a positive, healing environment for families and children with special needs to enjoy nature and participate in outdoor and educational activities.

The event will be a night of fashion, music and great food. Cake, Please! is donating a 3-D replica of a tree house at the Candlelight Ranch facility. The tree house was built in remembrance of Reese Gray daughter of loyal Cake, Please! client Tara Gray and donated to the organization. Cake, Please felt this would be a great opportunity to give to an awesome charity and showcase co-owners Keesha D. Waits and Jaime Chapman’s talent and skill.

The 3-D replica of the tree house will be valued at $250.00. Cake art is a new and intriguing form of art that is making a huge splash in the entertainment industry; thanks to Food Network shows like Ace of Cakes.

Cake, Please! Co-owner Keesha D. Waits conducts first successful Pampered Chef Cooking Show!

Hello Fellow Cake decorators,

NEWS FLASH!

Keesha while visiting family in North Carolina packed up her Pampered Chef inventory and conducted her first successful cooking show August 23rd with family and friends.

The event produced about 15 folks that showed up to see an exciting show with great Pampered Chef products and receipes.

The only mishap was a broken stoneware dish that did not make the flight.  I am sure she will get it back and some with all the free incentives from running successful cooking shows.

Keesha will announce the next cooking show on the website along with an email to all of the Cake, Please! subscribers.

Cake, Please! supports 1-141 Infantry Battalion Change of Command Ceremony

Welcome all aspiring cake decorators to the Baker’s Oven,

Another Cake, Please! News Flash:

Major Scott M. Macleod thought of Cake, Please! first when needing a special cake for his change of command ceremony.  Major Macleod’s first experience with Cake, Please! was for his daughter’s birthday a few months back.

Keesha, co-owner and head decorator was able to skillfully reconstruct the 1-141 Infantry Battalions unit crest using fondant.  Photo’s will be submitted soon to the website www.theoriginalcakeplease.com.

MAJ Macleod requested a cake that was half vanilla and chocolate with buttercream icing.  Via email he sent pictures of the unit crest where Keesha made a print out to assist with reconstruction.

The cake made it all the way to San Antonio, TX where the ceremony was held and he said and I quote “the cake was awesome and the unit crest was near exact”.

Cake, Please! Co-Owner graduates Summa Cum Laude from TX Culinary Academy July 26, 2008

News Flash for those that have not heard!

Keesha D. Waits, Co-owner and head decorator of one of central Texas’s fastest growing specialty cake businesses Cake Please! participated in Texas Culinary Academy’s official commencement ceremony July 26, 2008 at the Riverbend Centre. Keesha completed her coursework and graduated Summa Cum Laude top of her class with a 4.0 Cumulative GPA.

The graduates and the audience had the distinct pleasure of listening to Restaurateur Damian Mandola owner of Carrabba’s Italian Grill give the commencement address. He was very candid and told the students that nothing is impossible as long as you have a clear vision and determination.

Keesha and co-owner Jamie Chapman are now turning their focus to building the best selling cake-decorating Business in Central Texas.

Should Cakes be made with All-Purpose Flour? Cake, Please! Says….

Hello, fellow baker,

The answer is NO! Let’s start with a little history on Flour. Wheat flour is on of the most important ingredients in making baked goods. It provides structure and mass to most bakers’ products such as cakes, cookies, breads and pastries.
Since this one ingredient is so important to bakers it is important to understand the nature of it. To start there is hard and soft wheat. Hard wheat contains greater quantities if glutenin and gliadu which are the components that make-up gluten when the flour is moistened mixed. Gluten is a determining factor for the amount of protein present which can make baked goods tougher. Hard Flours are used in the makers of breads and yeast products. Soft wheat have a lower count of the gluten bi products and is used for cakes, cookies, and pastries.
The household flours most commonly used and or purchased are All-purpose and self-rising flour. However, commercial bakers are privy to a wide variety of flours with different qualities, characteristics, and specific purpose such as cake flour, bread flour and pastry flour. The specific purposes of these flours are clearly defined by their title.
So why cake flour over all-purpose flour? Well first and foremost the specificity of its nature. All-purpose flour is just a little weaker than bread flour and by its name all-purpose it can be used for any and all things, which is not always a positive. Cake flour on the other hand is soft wheat with a low-gluten content which leads to a softer/lighter product. Cake flour is very soft and smooth in texture. The ultimate goal of a cake baker is a light, fluffy cake with a tender crunch which leads to a moist cake.
The addition of starch in the making of cake flour allows it to handle large amounts of fat and sugar with out collapsing. Cake flour is finely milled which keeps the product from getting too heavy. All these elements make for an exceptional cake. So whenever possible us flours specific to your needs.
